Super simple lasagne recipe!

Hello guys! It's been a while since a blogged, I think I'm lacking inspiration as to what to blog about these days. I do plan to start writing more though as I feel really good when I do, so I guess I'll start pulling my socks up and thinking of more ideas- or just let them come to me, I might just start blogging about anything and everything. We'll see.

Anyway, life in general has been super kind to me recently. I'm currently on my final train back to Uni so felt it would be the perfect opportunity to put finger to touch keyboard. I've just been home for a week as it was my younger brothers Passing Out Parade in his army (proud moment), my younger sisters 7th birthday and also one of my best friends' 21st birthday Alice in Wonderland themed party! So basically a week I couldn't miss out on! 

This blog post is going to be about a meal I made a week ago. Being a vegetarian for several years mixed with being a poor student has meant that my means can be a little bizarre to others at times but equally just as yummy! I plan to start writing more blog posts on the veggie meals I eat and make, with substitute options for carnivores too! 

So, last week was a good one. I decided to be productive.. I know what you're probably thinking, how can you 'decide' to be productive, it's not as easy as that, blah blah. But honestly I did! I have become too used to staying up till a ridiculous time in the morning and sleeping in and then continuing to do fuck all with the rest of my days and I wasn't having it. I don't want to be lazy but it's a routine I've very easily adapted to. I only have uni two days a week now, with my new timetable, which has basically just given me an excuse to be even lazier. Not cool. So I literally just decided to set myself alarms in the morning and just getting up and doing something. Even if it was something as small and simple as having breakfast each morning (okay I haven't stuck to that one but still), it made me feel so much better doing something with my day and actually having a reason to be tired and have naps. Rather than just napping for the sake of napping. Guilty. 

So I decided to make a meal from scratch! This was probably the first time I've done this at Uni, I've made fajitas before but they're so simple. This was pretty simple too, but whatever, it was still from scratch, okay?
I fancied lasagne so I made lasagne. I didn't have any Quorn mince but decided I'd use Quorn burgers instead because Asda gave me shit loads as substitutes for something else I ordered from them that they didn't have. It sounds weird but it was amazing so just keep reading.

You will need:
-Quorn burgers/ meat burgers 
(I used 4 and it made a healthy sized portion, for two people I would say but I ate it all myself. Judge me.)
-Vegetables 
(This can be any vegetables you want, but what I find works best is peppers, aubergine, mushrooms, onions.. All that jazz.)
-Tomato sauce 
(Mine was just a tin of tomato and herb pasta sauce or something like that)
-Lasagne sheets 
(Obv)
-Lasagne sauce
(You know the white stuff that goes in between the layers? Minus the innuendo... You can also make this using yoghurt but this was cheaper lol)
-Cheese 
(All the cheese) 

The recipe is totally simple and extremely yummy. 

What I did: 
1. Chop up your vegetables however you'd like, put some oil in the dish you intend to make your lasagne in and add the veg. Add some pepper/herbs/garlic for extra yumminess. 

2. Place your Quorn/meat burgers onto another baking tray and cook until a little brown.

3. Roast your vegetables for a little in the oven on a fairly low temperature. Wouldn't taste as cute with burnt veg. 

4. Once the veg is fairly roasted and a little cooked, add the tomato sauce to them and place in the oven for a little while longer. 

5. Assuming your burgers are a little cooked by now, take them out of the oven and cut them into pieces, as big or small as you'd like.

6. Take out your vegetables and add some of the pieces of your burger to the veg and sauce. 

7. Place a lasagne sheet on top and then add some lasagne sauce to the top of the lasagne sheet.

8. Repeat process for however many layers you wish to do. I only had my vegetables on the bottom layer but it's totally up to you if you want to add more throughout. So, add more burger pieces and another lasagne sheet, again, putting some lasagne sauce on the lasagne sheet.

9. On your final layer, add some lasagne sauce to your lasagne sheet and then layer it with cheese. I personally think the melted cheese on the top is by far the best bit so I grate all the cheese. 

10. Place into oven on a low temperature for around 15-20 minutes and enjoy your scrummy simple lasagne, which can of course be made normally, with Quorn mince or just mince!
